INGREDIENTS
500G DICED PANEER CHEESE
1/4 CUP SOY SAUCE
4 TBSP TOMATO KETCHUP
1/2 OF EACH BELL PEPPER,GREEN, YELLOW, RED (DICED)
2 CLOVES GARLIC (FINELY SLICED)
2 INCH FRESH GINGER (CUT JULIENNED/MATCH STISKS)
1 TSP CHILLI POWDER
1/2 TSP TURMERIC POWDER (OPTIONAL)
1/2 WHITE ONION (SLICED)
2 RED CHILLIS (SLICED)
2 GREEN CHILLIS (SLICED) - (OPTIONAL FOR EXTRA HEAT)
3 TBSP CORIANDER/CILANTRO (CHOPPED)
2 SPRING ONIONS / SCALLIONS (CHOPPED)
PREP 5-10 minutes
dice the paneer into 2cm pieces (or buy pre-diced)
dice the bell pepper into similar size chunks to the paneer
slice the onion into thin shreds
roughly chop the green and red chillis and spring onion in to small pieces
cut the ginger into match sticks, long and thin as in the video
finely slice the garlic
roughly chop the coriander/cilantro
METHOD
There are two parts to making this dish. Both really easy and quick.
Part 1
heat up a large shallow pan, ideally a wok! Lightly coat with veg oil
when hot, add the diced paneer and move around the pan until evenly golden in colour
empty the paneer into a bowl and set aside
Part 2
heat up the same pan and again lightly coat with veg oil (high heat)
add in all of the sliced garlic and half of the ginger match sticks
lightly brown and then add in the soy sauce and swirl around the pan
now add the tomato ketchup and stir until mixed in
add the chilli and turmeric powder and stir the sauce well
The Sauce is pretty much made now so if you are making this in advance and want to finish off just before serving just set all aside and continue the next bit when ready to eat...
add the diced bell peppers to the sauce and cook for 2-3 minutes whilst continuously stirring
now add half of the sliced green and red chillis
along with all of the sliced onion and continue to stir
when nicely mixed in, add the pre cooked paneer and stir like mad! lol
Ok so don't stir like mad but what you are trying to do here is properly coat the paneer with the sticky sauce and keeping the heat up will help it caramelise to the sides of the cheese. Stirring quick will prevent the sauce sticking to the pan or at least reduce this :)
now slip in the fresh coriander/cilantro and sliced spring onion and stir for 20 seconds.
GARNISH
Sprinkle the remaining ginger and chillis. Feel free to add a little more fresh coriander if you fancy.
